Ingredients

  • Winter Squash, cut in half (seasonally available in  Farmer Ken's Harvest Box)
  • 6 ounces of chorizo, Italian sausage, ground turkey/beef, or plant protein substitute (crumble into pieces)
  • 2 tsp olive oil or butter
  • 1 cup shredded or grated cheese
  • 1 cup fresh vegetables, diced (Shop Farmer Ken's Harvest Box or use any combination of tomatoes, onions, peppers)
  • 1 cup fresh leafy greens (any combination of kale, arugula, tatsoi, chard, mustards,
    spinach)
  • ¼ cup chopped fresh herbs (Shop Farmer Ken's Culinary Herb Bundle or any combination of basil, oregano, thyme)
  • 2 cups of cooked rice or quinoa
  • Seasonings (salt, pepper, pepper, garlic powder)

Directions

  1. Roast the Squash
    • Preheat your oven to 375°F (190°C).
    • Slice each acorn squash in half lengthwise and scoop out the seeds.
    • Rub the flesh with olive oil and place cut-side down on a parchment-lined baking sheet or ovenproof dish.
    • Roast for 30–40 minutes, or until squash is tender when pierced with a fork.
    • Remove from the oven and let cool slightly.
  2. Brown the Meat (Optional)
    • While squash roasts, heat olive oil in a skillet over medium heat.
    • Add chorizo, sausage, or ground meat; cook until browned and cooked through.
    • Remove from pan and set aside.
      Vegetarian option: Skip this step or use lentils, beans, or crumbled tofu for added protein.
  3. Cook the quinoa (or rice)
    • Prepare 1 cup of quinoa or rice according to package instructions.
    • Fluff with a fork and set aside.
  4. Sauté the Vegetables
    • In a large skillet, heat 1 tablespoon olive oil.
    • Add onions and bell peppers (or other firm seasonal vegetables).
    • Sauté for 7–10 minutes, until softened.
    • Stir in chopped herbs and leafy greens (like kale or chard).
    • Cook an additional 5 minutes, until wilted.

  5. Combine the Filling
    • Add browned meat, cooked grains, and sautéed vegetables to the skillet.
    • Stir well to combine.

  6. Stuff and Bake
